This recipe makes enough to serve two meals for four people. The loaf can be served hot or cold.
1 small onion, quartered
4 cloves garlic
1 red pepper (capsicum) seeded and chopped
2-3 teaspoons chilli paste or chopped chilli
1kg lean minced beef
1 cup fresh breadcrumbs
1 large egg
Sauce: 2 cups tomato salsa
2 tablespoons lemon juice
chilli paste to taste
Place the onion, garlic and red pepper in a food processor and finely chop. Combine with all the other ingredients, mixing very well. Pat firmly into a microwave loaf pan or ring mould.
Place on a rack in the microwave. Cover with a paper towel. Cook on half (50%) power for 6 minutes. Stand for 6 minutes, then continue cooking on half power for another 6 minutes. Stand for 6 minutes. Drain off the liquid before slicing thinly to serve.
Combine the ingredients for the sauce and heat through in the microwave. Serve over the sliced meat loaf. Excellent topped with chopped coriander and avocado accompanied by corn chips.
